    At Akira Back, the soy sauce used for sushi rolls, nigiri, and sashimi is blended with
    other ingredients (mirin, dashi, and brown sugar). However, upon guest request,
    we can provide gluten-free soy sauce (not blended).

    The mirin and sake currently used are gluten-free products.

Born in Seoul and raised in Aspen, Chef Akira Back’s path from professional snowboarder to Michelin-starred chef has been anything but conventional. His restaurants across Paris, Hong Kong, Dubai and Toronto are celebrated for their inventive menus, electric atmosphere and the singular creativity that defines everything he touches. Akira Back Ottawa brings that vision to Canada’s capital.
